Tom Yum Prawns
Ingredients 3 cups (750mL) water or light stock 1/4 mushrooms / vegetable 5 kaffir lime leaves 3 thin slices fresh or dried galangal 1/4 cup fish sauce 2 stalks of lemon grass Thai chilli 1/4 cup lime juice 1 teaspoon roasted chilli paste 1 tablespoon chopped coriander leaves
Method Bring the stock to boil over medium heat. Add lime leaves, galanga, fish sauce, lemon grass, then the mushrooms, simmer for two minutes. Add the prawns. Reheat to boiling. Pour the soup into the bowl and stir with coriander leaves.
